Greek Chicken, Salad and Roast Potatoes

INGREDIENTS LIST

Creates 4 Servings

2 Chicken breast, sliced in half horizonally to make 4 thin cutlets

1.5 Lemons, Juiced

4 Garlic Cloves, minced

1/4 Cups Olive oil

1/3 Cup Fresh Parsley, Chopped

2 Tbsp Fresh Oregano, Chopped

1/2 tsp cumin powder

1/2 tsp chilli flakes

1tsp salt

1/2 tsp black pepper

GREEK SALAD INGREDIENTS

1/2 punnet cherry tomatos

1/3 Cucumber, half slices

1/2 cup Kalamata olives

1/2 Cube fetta

1/2 Red Onion

 

METHOD

Step 1 - In a large bowel, combine fresh lemon juices, olive oil, minced garlic, fresh parsley, fresh oregano, cumin powder, chilli flakes, salt and pepper.

Step 2 - Cut Chicken breasts in half horizontally to make 3 thin cutlets and mix into bowl iwht other ingredients

Step 3 (optional) - Cover and place in the fridge for 30 minutes or overnight.

Step 4- Cut up greek salad ingredients and put into bowl.

Step 5 - Preheat grill or grill pan and drizzle with 2 tbsp olive oil.
