Barrmundi Tacos

INGREDENTS LIST

Serves 4

1/4 cup olive oil

2 Large Barrmundi fillets or any seasonal white fish

1/4 Red Cabbage

1/2 cup fresh Coriander

1 - 2 Limes, zested and juiced

1 tsp Maple syrup

1 tbsp Apple cider vinegar

3/4 Apple or 60g pineapple pieces

1 Can of Corn

10 corn tortillas

Barramundi spice mix–

1 tbsp Ground Coriander

1 tbsp chilli powder

Salt and pepper to taste

METHOD

Step 1 - Cut barramundi into 2cm thick slices and coat with spice mix.

Step 2 - In a pan, heat the olive oil to a medium - high heat.

Step 3 - Sear fish for 5 minutes each side.

Step 4 - Thinly slice cabbage and add to a bowl with corn, corriander, lime zest, lime juice, vinegar and maple syrup and mix well.

Step 5 - In the same pan as you cooked the fish, fry the tortillas until slightly crispy.

Step 6 - Assemble with the pickled cabbage, fish and top with apple or pineapple slices, fresh corriander and mayo.
